Not a surprise - I’m a Pisces, the fish as we’re a water sign. Maybe that’s why I love all of the different varieties of fish and seafood sooo much. Salmon is my new fave! Some call it a nutritional powerhouse with all the vitamins, nutrients and Omega 3s!! But also - it’s just amazingly yummy! I love grilling it, pan searing or broiling it in the oven for simple sheet pan dinners. This time I added some freshly sliced pineapple on the pan too for a wonderful caramelized touch to enhance the sweet heat on the salmon.
Ingredients:
- 2 lbs salmon cubed into large pieces (thicker cuts are always best!)
- 2 TBSP. SUNNY ST PETE SWEET HEAT BLEND
- a little olive oil
- fresh pineapple slices
- honey
- Skewers
Directions:
There are several options for cooking our SURFIN SWEET HEAT SALMON SKEWERS. They’er awesome on the grill or on the stove…I often cook them using this easy sheet pan method too!
- Place Salmon Cubes on Skewers
- Using a large baggie, Season the salmon skewers with a little olive oil and 2 Tbsp. Sunny St Pete Sweet Heat Blend. Mix well. Then seal and let marinate in fridge at least 30 minutes.
- Place Salmon Skewers & pineapple slices on sheet pan prepared with a little olive oil
- Top with a drizzle of honey
- Bake at 350 til tender & flaky (around 15- 20 minutes)
Serving Suggestions:
Serve over rice or mashed potatoes and a side of broccoli or asparagus & grilled red or orange Peppers. YUM!!
