SUNNY CARNE ASADA QUESADILLA RING

It’s a Super Bowl LX weekend!!   And… the Super Bowl is always a blast with family and friends!  The football, the entertainment, the commercials and the FOOD!  

Whether you’re hosting a party or taking along an app - you want to SCORE big for the whole crowd!  

I thought for this one - I’d try our new SUNNY CARNE ASADA QUESADILLA RING - our twist of the viral quesadilla ring (that’s all over social media) with a sunny SUNSHINE DAZE vibe!   

We’re using two of our groovy blends fo this one - Our HIPPIE CHICK CHILLIN CHILI POWDER  & AMI ISLAND GIRL ROASTED GARLIC to create an amazing marinade for the steak!   

Carne Asada you ask?  Or as my husband said, what’s that???   Simply, Carne Asada is… “beef that has been marinated and grilled, typically served sliced in thin strips as a main course or as a filling in tacos, burritos, etc.” (dictionary.com).  Or even more simply in Spanish origin…“grilled meat.”

When making it, it comes down to a few staples. 

  • Lots of sliced veggies (green & red peppers & onions)
  • Well marinated steak or beef (with lime, lemon, orange & seasonings) 
  • A bag of 20 tortillas (larger size is easier for rolling them)
  • Lots & lots of cheese for gooey melted yumminess!
  • Your choice of toppings (sliced cherry tomatoes, diced onion & peppers, salsa, sour cream, etc…) 
  • And some FUN creativity putting it all together  OH & FYI - putting a bowl in the center is a must!   

Believe me, once its all finished and assembled (and you bring it out at the party) - it's a definite TOUCHDOWN on game day!! 

SOO... Let’s warm up & get started!  

  • Slice steak into small strips & put in large rectangular container! 
  • Slice green & red pepper and onions (reserving several slices of each to dice for toppings) & add the rest to the rectangular container and mix with steak. 

         Make your marinade

  • Squeeze one lime, one lemon, and an orange into large bowl, soy sauce, olive oil, and cilantro.
  • Add HIPPIE CHICK CHILLIN CHILI POWDER  & AMI ISLAND GIRL ROASTED GARLIC BLEND   
  • Mix all ingredients well. 
  • Pour mixture over steak, peppers and onions mixing well.  Cover and refrigerate at least an hour  (or overnight.)

We’re ready to rumble now!   Get the grill ready or use a hot skillet on the stove! 

  • Grill the steak (til desired doneness) and veggies (I usually wait til the end for veggies and quickly grill for a quick char!) 
  • Grab a large plate or platter and put a bowl in the center. 
  • Wrap steak and veggies in tortillas - Ieaving the ends open (like a tulip)  
  • Arrange quesadilla wraps in a circle around the bowl (you may need to place the bowl on top of the ends as you go.) 
  • Once in a circle, add more meat and veggie mixture  as needed & top with a little shredded cheese.  Place more shredded cheese in the center area (covering about 3/4 of the area - the more the better!) 
  • Bake at 350 for about 30 minutes (or so) til cheese is melted and tortillas start to brown. 
  • Place remaining diced veggies in the center w/ tomatoes around for decorative finish.  
  • Serve with salsa, sour cream, guacamole, and other desired toppings! 
  • And... a tasty beverage too!!!   

INGREDIENTS: 

2 pounds (or more) of desired steak (sirloin, skirt, strip, etc…)

2  8 oz pkgs. shredded mexican cheese 

2 TBSP HIPPIE CHICK CHILLIN CHILI POWDER  

2 TBSP AMI ISLAND GIRL ROASTED GARLIC BLEND   

1 Lime 

1 lemon

1 Orange

2 red peppers

2 green peppers

2 spanish onions

2 TBSP soy sauce

fresh Cilantro

olive oil (1/4- 1/2 c.) 

TOPPINGS:

salsa (try our Kickin salsa recipe)

sour cream

Guacamole
