EGGALICIOUS CHEESY EGG BAKE

Protein Girlies will love this amazing make ahead Eggalicious Cheesy Egg Bake.  It’s perfect for a girls brunch, a fancy breakfast buffet, or a make ahead quick family meal to get the kids to eat extra goodies before school & the big game!!   It's Eggalicious!!  

Why am I thinking a Fergie song here?  Maybe it’s just my music era!! (If you know, you know…and now it’s in your head too!)   LOL 

Music aside....It’s a nutritional and protein powerhouse, filled with veggies and cheeses and seasoned with our AMI ISLAND GIRL ROASTED GARLIC BLEND.  We added some cut up Italian garlic chicken sausage (thanks Trader Joe’s) for some extra protein too!  And…. the other big secret??  Cottage cheese!  Talk about throwing in more protein! 

It’s simple and sooo easy - especially if you meal prep a lot!   

I guess it’s the Pisces in me - but one of my favorite things to do is to chop chop an array of veggies and have them in the fridge ready in a snap!   I just love all the colors (like opening a new box of crayons!)  Makes me feel healthier just seeing the palette - red, yellow, orange & green peppers, carrots, purple cabbage, onions, celery, red radishes, tomatoes, red & green grapes & more!

And… Once you throw a bunch of those veggies into our Eggalicious Cheesy Egg Bake, not only will you notice the colorful display, you’ll instantly feel like you’re having a healthy & nutritious start to your day! 

Directions….. 

Gather your veggies…. I used red, green, orange peppers, onions, green onions, asparagus, cherry tomatoes (my new jam) and spinach (Kale works as well). 

Sautée the veggies til a little brown (except for cherry tomatoes) in a little olive oil - waiting til the end to add your spinach (or kale) for a quick stir.  

In a large bowl, whisk 8 eggs, add 1/2 carton of 2 % cottage cheese, milk or heavy whipping cream, 1-2  TBSPs AMI ISLAND GIRL ROASTED GARLIC BLEND,  1-2 cups shredded cheese (your choice).  I used Mexican Cheese here - but Swiss or many other cheeses will work beautifully! 

Prepare (or butter) your casserole dish - medium size rectangle, square or round (large pie shape) works well too!  

Layer your sautéed veggies on the bottom. Pour mixed egg & cheese mixture over veggies.  Top with additional shredded cheese & place sliced Chicken Sausage in the center.  Arrange halved cherry tomatoes around sausage. Garnish with green onions and a little fresh Italian parsley. 

Bake at 350 for 30-45 minutes until slightly browned and cheese is bubbling!   Eggalicious!!  (There’s that song again!!)  LOL 

Ingredients:

8 Eggs

8 oz.  2% cottage cheese 

1 c whipping cream or milk

1-2  TBSPs AMI ISLAND GIRL ROASTED GARLIC BLEND

1-2  cups shredded cheese (cheddar, mexican, swiss, mozzarella - your choice)

Butter

Spinach (or kale)

An assortment of veggies as desired…. (I used these below)

  • Asparagus
  • Chopped green, red, orange peppers, onions,
  • green onions 
  • cherry tomatoes (halved)
