
As I was driving around listening to music, enjoying the top down in the VW bug, my mind got to thinking about what to bring to our next girls night! They’re kind of a boho group so I decided to roll up some peace and love in a different twist on the classic lasagna and chili.
Yep, I’m that girl… daydreaming while driving - with the sunnies, and the peace signs and the music. But, cooking has always been my way to share some love and good times and chill with friends and family! FLOWER CHILD CHILI ROLL UPS bring that funky vibe to your regular dinner night or a party with your besties! They're a different take on the classic lasagna!
Plus they’re sooo easy - You can make them in advance when life is crazy busy!!!
It starts with the unique blend of chiles in our HIPPIE CHICK CHILLIN CHILI POWDER. We’re talkin Ancho, Guajillo, and a Chipotle blend along with tomatoes, onions, beans, beef, cheese and lasagna noodles. Rad right??

FLOWER CHILD CHILI ROLL UPS
Bring a large pot of water to boil.
Meanwhile, add a little olive oil in a large skillet with chopped onions & diced green pepper.
Cook til onion and peppers are tender. Add lean ground beef and cook until tender.
Mix 1 TBSP. HIPPIE CHICK CHILLIN CHILI POWDER into lean ground beef then add chili
beans, canned tomatoes and prepared spaghetti sauce. Mix well & simmer to blend flavors.
Place Lasagna Noodles into boiling water and cook until almost done. (They’ll cook a bit more while baking plus a too soft texture makes them harder to roll up.)
Line cooked lasagna noodles on a platter. Spread ricotta, shredded cheeses & chili beef mixture on top of each lasagna strip and roll up carefully. Reserve 1/2 cup chili beef mixture for topping.
Place Roll Ups in greased baking dish and top with a the additional chili beef mixture & parmesan cheese.
Bake at 350 degrees 35-40 minutes.

1 jar prepared garlic and herb spaghetti sauce
1 can diced tomatoes
1 can mixed chili beans
1 1/2 pounds lean Ground beef1 chopped onion
1/2 chopped green pepper
16 oz. blend of shredded mozzarella and sharp cheddar cheese
4 oz. shredded parmesan
8 oz. ricotta
1 box lasagna noodles
