
Dreaming of vacay as that alarm goes off again??? Soooo…. how many times do you hit it before running out the door??? It’s easy to do especially when your day is jam packed with work, family, friends, and all the Mom stuff that goes with it!
Then….. As you’re about to grab the keys and leave, you remember everyone is coming to your house for dinner! Why can’t I be on VACAY now??? That was my life EVERYDAY!!! And if it wasn’t the team coming for dinner after a long day at work, it was our family & friends!
I’m an only - but my husband has 6 siblings and it was common for us to have dinners and parties for 20-30 people regularly. Nutso! But - as hectic as those moments are - they literally are some of the best times in life to cherish forever! Thank God for the SLOW COOKER!

Make it a beach party at home - grab the blender too while you’re at it - and enjoy a simple & delicious meal that’ll cook all day and be ready when you are!!
Ingredients:
2- 3 chicken breasts (cooked & shredded)
1 spanish onion (sliced)
1 green pepper (sliced)
1 red pepper (sliced)
1 can chicken broth
1 can rotel tomatoes
2 -3 TBS FLIP FLOPPIN FLORIDA FAJITA BLEND
a little butter and olive oil
toppings:
lettuce
shredded Mexican cheeses
tomatoes
jalapeños
sour cream
tortilla chips
avocado
salsa
Beverage of your choice - Margs? Beer? Topo Chico?
Directions:
Sometimes I just dump it in the crockpot and go. Turn on low for 8 hours and these yummy BEACH PARTY CHICKEN FAJITAS are ready when you are! Doesn't get easier than that huh???
Other times, I’ll sauté the veggies first in some olive oil to caramelize a bit then add them to the Slow Cooker with the other ingredients then turn on low for 8 hours.
This recipe works great in a dutch oven as well. Saute veggies on the stove first then add to dutch oven with other ingredients and bake on 300 for 45 minutes to an hour.
Serving suggestions:
Serve with your choice of…. lettuce, shredded Mexican cheeses, chopped tomatoes, jalapeños, sour cream, tortilla chips, guac & salsa!
Oh… and don’t forget the tasty beverage!
